Booking a flight from the UK to Australia or New Zealand for migration purposes (usually a one way ticket!) can be achieved easily through your local holiday travel specialist or directly via the airline of your choosing website. As a migrating passenger it's worth enquiring about luggage allowance – some airlines offer double the standard baggage allowance (not cabin baggage).
Other items to consider are whether you buy a return ticket (it's strangely cheaper to fly from the UK to Australia than it is the other way around – no matter where the exchange rate lands – at least that's our observation) and adequate travel insurance.
